Vegan Thai Salad (WFPB – Gluten Free)

Looking for a salad that can be whipped up in under 5 minutes and tastes so good you will finish it in 5 minutes as well? Haha.

Look no further! This one is my go-to salad when I want all the plant goodness without any of the work. Enjoy!

Spring is peeking its head in so let’s get Salad ready!

Vegan Thai Salad

  • 2 Zucchini

  • 1-2 carrots

  • Lettuce

  • Red Cabbage

  • 1/4 cup peanut butter

  • 2 tbsp water

  • 1 tbsp maple syrup

  • 2 tbsp lime

  • 2-3 tbsp soy sauce (low sodium)

  • Cilantro/Parsley

  • Sesame Seeds

Spiralize or julienne zucchini and carrot.

Chop lettuce and cabbage.

Whisk together dressing ingredients

Toss dressing with salad.

Top with cilantro and sesame seeds.
