15 Minute Veggie Wraps

Lunch is served! In just under 15 minutes you can have the most delicious Vegan Veggie Wraps for lunch! I absolutely love a good wrap after a hard workout or just a delicious treat. I hope you love this variation!

Veggie Wraps


1 Sweet Potato
2-3 cups Cooked Garbanzo Beans
1/4 cup each: Soy Sauce / Orange Juice / Lime 
Optional Maple Syrup to taste

GF/Whole Wheat Wraps

Preheat oven to 400F/200C and heat skillet to medium heat. Take 2 cups cooked garbanzo beans and mix with: 1/4 cup soy sauce, 1/4 cup Orange Juice, 1/4 cup Lime juice and optional maple syrup to taste. Mix well and pour into skillet. Turn heat up to medium-high and allow the sauce to evaporate and the beans to brown.

While those are cooking, peel and slice the sweet potato very thin (thin = faster baking time). Lay out on baking sheet lined with a silicone mat or parchment paper and bake for 10 minutes, until soft.

While those are baking, prep your veggies.

Build the wrap: Lay wraps flat and add sweet potatoes and garbanzo beans. Top with lots of sprouts, tomatoes and avocado. Sprinkle with hemp seeds.
